Twilight Sparkle Symbol Vanilla and Strawberry cupcakes

I have a little cousin that loves My little Pony so i thought i would make these cupcakes for her. Her favorite is Twilight Sparkle so these cupcakes has her symbol on them. I made it with frosting and i found that it was a bit hard to make it look right so i recommend you make the symbols seperatly with fondant or icing or even chocolate and let them dry. It would look much better that way. 
I colored the frosting with normal liquid food color that you get at the grocery store and I didn't like it so I recommend you get gel food color instead. Gives a more vibrant color and with for example Wilton food color you can find the different measurements on their website (click here for the website) on how to get the perfect color. 



So let's get started with the cupcakes :) 

With this recipe you'll get 12 cupcakes



The tools you'll need for the muffins are:
Mixing bowl (medium size is enough)
Handmixer or standmixer (whatever you prefer)
Sifter
Cupcake/Muffin liners
Muffin tray
Spatula or big spoon

Ingredients:
150 g butter (room temperature)
180 g sugar
3 eggs
200 g self rising flour*
4 tsp pop rocks with strawberry flavor

*self rising flour has baking powder and salt in it already which means that you don't need to add that. Makes baking so much easier.

Instructions:
Preheat your oven to 175⁰C (350⁰F) and put the cupcake liners into the muffin tray.


Mix butter and sugar until it get fluffy.















Add one egg at a time to the mixture and mix 














Sift the flour into the bowl and fold it into the mixture














Add pop rocks and fold this into the mixture too. I split the mixture into 1/3 and 2/3. Add food color to 1/3 of the batter. Since i'm making Twilight Sparkle cupcakes I dyed it purple/pinkish. 











Add some white batter to the bottom of all the liners. Then add the purple/pinkish batter and last the rest of the white batter. This will give the muffin a cool pattern when you bite in to it. 











Bake the muffins for 18-22 minutes but keep an eye on them. When they get golden brown on the top and dry in the middle (try with a toothpick) you know that they're done. 











I mixed red and blue food color to make this purple. But like i said in the beginning i don't recommend using liquid food color. 












I seperated the buttercream frosting (click here for recipe) and dyed the biggest part purple, medium part pink and didn't dye the rest so it stayed white. 












I added some frosting to the muffins and scraped it off with the tool you see in the picture. It's a decorating triangle but it's discontinued but you can find it here. A similar thing would be this 3 Pc. Icing Comb Set










I looked up the symbol on google and tried to replicate it with frosting. 















Tips: Adding some strawberry flavor to the batter or frosting will make it taste more like strawberry. With the pop rocks only you get a subtle taste of strawberry :)
