Blueberry (or any berry or fruit) muffins

So this is just a simple berry muffin. Sometimes it's nice to have something quick and easy to make. Like always you can make these into cupcakes too but I did not.

I used the same recipe for these muffins but i put strawberry jam in the middle instead of berries in the batter
You'll get around 28 muffins with this recipe

The tools you'll need for the muffins are:
Mixing bowl (medium size is enough)
Sifter
Handmixer

Cupcake/Muffin liners
Muffin tray



Ingredients:
200 g flour
1 tbls baking powder

1 tbls vanilla custard powder
175 g butter (room temperature)
100 g sugar (50 g if you don't like it too                               sweet)
3 eggs
1 tsp vanilla extract (or vanilla sugar)
100 g blue- or blackberries*

*you can add more berries if you want and use any kind of fruit that you like.




Instructions:
Preheat your oven to 200⁰C (390⁰F) and put the cupcake liners into the muffin tray.

Sift the flour, baking powder and custard powder into a bowl.

Add butter, sugar, eggs and vanilla and mix it all into a smooth batter. 


Add the berries and mix it through with a spatula or spoon. 
Spoon the mixture into the liners. They should be 3/4 full. Put them in the oven for about 20 minutes. When they are golden brown and dry inside (check with a toothpick) they are done. 











TIPS: If you don't like fruits and berries in your muffins or cupcakes you can add a click of jam when the batter's in the liners. Any jam works since these are simple vanilla cupcakes :)
